Cauliflower Mash Recipe

This is an easy recipe, the only time consuming is the steaming the cauliflower. A great substitution to potato mash potatoes. You can also load it up with cheese, bacon, sour cream as a "baked potato", short ribs, steak, and etc.



Ingredients

  • 2 bags of organic cauliflower rice ( 12 oz. each)

  • 1/2 cup of organic heavy cream

  • 3 tablespoons of grass-fed butter (Kerry Gold salted)

  • 1/4 teaspoon garlic powder or 1 tbsp of minced garlic

  • salt and pepper to taste


Equipment

  • Cheesecloth to drain cauliflower

  • Immersion blender or food processor


Instructions

  1. Steam cauliflower rice in a steamer for about 8-10 minutes. You want to make sure it's completed defrosted and warm. I then put it in cheesecloth to squeeze the water out after allowing it to cool. You don't want to burn your hands! I don't steam them in the bag (if that's the option) in the microwave due to the unknown toxins in the bag. Plastic and heat aren't a great combo.

  2. Drain the excess water, you will put the cauliflower rice in a pot and add heavy cream, butter, garlic, salt, and pepper over low - medium heat and mix well.

  3. Use an immersion blender to puree the cauliflower, you can use a food processor but the immersion is easier and not plastic.

  4. Once you have a smooth consistency, it's ready to serve!
