Grandma Jane Ludlow's Short Rib Recipe

This recipe is from my husband's grandmother (mom's side) and one of his favorite dishes. I recently made this for his birthday and have many requests for the recipe.


The meat is very tender, you can cut it with a fork.


Ingredients

2 1/2 - 3 lbs. beef short ribs

1 medium onion sliced

Sauce

1/2 cup ketchup

1/3 cup vinegar

2 tsp chili powder

1 1/2 tsp salt

1 tsp paprika

2 tablespoons olive oil

Salt and pepper to taste


  1. Salt and Pepper short ribs

  2. Brown short ribs on all sides ~5 mins each side with olive oil

  3. Mix sauce ingredients together and pour over short ribs

  4. Add sliced onions on top

  5. Two options to cook:

  • Bake: cover at 325 F for 1 1/2 hours

  • Pressure Cooker: Stew or Pressure cooker setting for 35 minutes

Tip: If meat is tough, can bake or pressure cooker longer. Meat should not overcook.


We make this with cauliflower mash and a side vegetable like broccoli.
